Glucose and related oligosaccharides are capable of repolymerisation at high temperatures in the presence of catalytic amounts of acid. Repolymerisation occurs at the high temperatures encountered in dextrin production processes. Partial repolymerisation of sugars also occurs in the enzymatic hydrolysis of starch where it is known as reversion. Isomaltose is a typical potential reversion product.
