In Greek mythology Ethiopia (Aethiopia), is the name of a Phoenician Kingdom, which was conceived to be stretching from Syria down to the shores of the Red Sea and included parts of present-day Israel, Jordan and Egypt. The capital was Joppa, a city on the Levantine coast.
Ethiopia is a very complex coffee origin. The best Ethiopia dry-processed coffee (Harrar or Harar) tends to be medium-bodied and brilliantly acidy with rough, fruity or winy tones. The best washed Ethiopian coffee (Yirgacheffe, Sidamo, some Limu, and some washed Djimah) is light-bodied but explosive with complex floral and citrus notes.

The grade of these high-altitude arabicas depends on the region where they were grown and the method of processing – “natural” or “wet”. All can be called mochas. But the label most frequently encountered, Ethiopian Mocha, is meaningless, since there is a dramatic difference between a “natural” mocha from Djimma (very good) and a wet processed mocha from the Yrgacheffe region (rare and sublime). Although the wet processed beans are consistently excellent, the “naturals” can vary considerably depending on the year or the plantation.
