When an animal survives the Winter and lives until the following Spring. Many insects die when the weather gets cold, but some overwinter.
A crop which is sown in the Autumn for harvest the following Spring is called an over-wintered crop.

Alternately, overwintering can refer to spending winter in a more favourable (usually warmer) locale.
