Complex carbohydrates (cellulose and starch) are derived from fibre sources and cereals. Most simple carbohydrates dissolve easily in warm or cold water, whereas complex carbohydrates must be broken down by enzymes in the gut.
Any foods, including starches, sugars, celluloses, and gums, that are broken down to simple sugars through digestion.
