It may be obtained by saponification of fats and oils. It is a triatomic alcohol, and hence is also called glycerol. See Note under Gelatin.

Glycerin is an ingredient found in many protein bars. It gives the bars a soft, chewy, moist texture. Made from an alcohol that is derived from animal fats and plants emollients, glycerin is a carb. However, glycerin is not listed as a carbohydrate on some protein bar labels because glycerin does not effect blood glucose or insulin levels like other carbs. The FDA currently holds that glycerin should be listed as a carb, pending further research.
